Today is my husband’s 32nd birthday. Since we are traveling opposite places tomorrow and have early airport calls, we celebrated at dinner last night and today I got up early to make him an extra special birthday breakfast: eggs, bacon & birthday cake waffles.
I have been starring at pictures of waffles on instagram for a few weeks (yes I follow food accounts) and today was the perfect day to get a little creative with breakfast and make something instagram-worthy of my own. So here’s how I made the best birthday cake waffles I’ve ever had…
Ingredients: 1 1/3 c. Belgian Waffle mix, 3 TBSP oil, 2/3c. water, 1 egg, 1/2 c. funfetti mix, extra sprinkles, and frosting for topping
After mixing the ingredients, I used our waffle maker for the third time ever and made these beautiful, delicious and celebration-worthy waffles. The only trick I learned along the way was to add sprinkles before each new waffle hit the iron (so they don’t bleed into the rest of the mixture). Very, very easy and very, very tasty.
Lastly, I microwaved two tablespoons of store-bought frosting for 15 seconds and gently poured it over the waffle stack and added more sprinkles.
Along with his waffles, Jarob got fried eggs and bacon, and candles in his “breakfast birthday cake.”
